Are green potatoes toxic?
Exposure to sunlight can encourage the production of other compounds besides chlorophyll. Unfortunately, one main toxin green potatoes produce, called solanine, can be toxic to humans. It will inhibit the enzyme involved in breaking down certain neurotransmitters, and also harm your intestine's permeability by damaging your cell membranes. Therefore, over-consuming it can potentially cause vomiting, diarrhea, sweating, headaches, and stomach pain, or in more severe cases, paralysis and breathing problems.
