6. Kale
This leafy green is an excellent source of vitamin A and vitamin C and is at its best in the fall and winter months. It also provides a good source of calcium and potassium. Many people choose to grow kale on their own because it can sustain even in cold weather. It is the last vegetable that stays in the garden after everything else has been pulled out. The leaves are hardy enough to stay well when you add them in soups or sautéed with a little oil and garlic.
