Of course you can, but not all parts of sprouted potatoes. In fact, GAs are always present in potatoes, though in varying amounts. While sprouts and the skin contain the highest level of GAs, the closer the flesh is to the cortex, the lower level of GAs is. Therefore, simply remove the skin and sprouts of the potatoes before cooking. Note that no cooking method is proved to be effective in lowering the GA level in sprouted potatoes.
