2. Greek Yogurt Pancakes
Ingredients:
- 1/2 c. vanilla Greek yogurt
- 1/3 c. milk
- 2 large eggs
- 2 tbsp. maple syrup
- 1 tsp. pure vanilla extract
- 1 c. all-purpose flour
- 3/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. kosher salt
- Yogurt, strawberries, blueberries and syrup, for serving
Directions:
- Whisk together yogurt, milk, eggs, syrup, and vanilla.
- Whisk together flour, baking soda, baking powder, and salt.
- Add flour mixture to yogurt mixture and mix to combine.
- Spoon enough batter into the nonstick pan over medium heat to make 3 or 4 medium pancakes (about 2 tablespoons each) or many smaller pancakes (about 1 tablespoon each).
- Transfer to a wire rack and top with yogurt, strawberries, blueberries, and syrup.
