3. Hash Brown Egg Nests

Ingredients:

  • eggs, potatoes and cheese

Directions:

  • Peel and grate the potatoes, then rinse and dry them with paper towels.
  • Divide the potato hash between greased muffin cups and press them in with your fingers.
  • Bake until the edges are golden brown and remove from the oven.
  • Whisk the eggs together with the dressing and pour the mixture into each nest.
  • Top with cheese and return to the oven till eggs are set.
