5. Mexican Breakfast Chilaquiles
Ingredients:
- 6 large eggs
- 1/2 tbsp. canola oil
- 5 oz. tortilla chips
- 1 c. Shredded Monterey Jack cheese
- 1/4 c. pickled jalapeño slices
- 1 avocado, thinly sliced
- 1 c. pico de gallo
- 2 tbsp. cilantro, chopped
- Sour cream, for serving
- Lime wedges, for serving
Directions:
- Beat eggs with 1/4 teaspoon salt.
- In a nonstick skillet over medium heat, add eggs and scramble for 3-4 minutes.
- Spread chips, half the cheese, eggs and jalapenos in the same pan and sprinkle with the remaining cheese. Bake for 1-2 minutes until the cheese is melted.
- Remove from the oven and top with avocado, jalapenos, and cilantro.
- Add sour cream and lime wedges, if desired.
