5. Mexican Breakfast Chilaquiles

Ingredients:

  • 6 large eggs
  • 1/2 tbsp. canola oil
  • 5 oz. tortilla chips
  • 1 c. Shredded Monterey Jack cheese
  • 1/4 c. pickled jalapeño slices
  • 1 avocado, thinly sliced
  • 1 c. pico de gallo
  • 2 tbsp. cilantro, chopped
  • Sour cream, for serving
  • Lime wedges, for serving

Directions:

  • Beat eggs with 1/4 teaspoon salt.
  • In a nonstick skillet over medium heat, add eggs and scramble for 3-4 minutes.
  • Spread chips, half the cheese, eggs and jalapenos in the same pan and sprinkle with the remaining cheese. Bake for 1-2 minutes until the cheese is melted.
  • Remove from the oven and top with avocado, jalapenos, and cilantro.
  • Add sour cream and lime wedges, if desired.
