4. Twice-Baked Citrus-Almond Brioche
Ingredients:
- 1 1/4 c. sliced almonds
- 1/2 c. sugar
- Kosher salt
- 1 large egg
- 4 tbsp. unsalted butter, at room temperature
- 1/4 tsp. almond extract
- 1 tbsp. orange zest
- 1/4 c. orange juice
- 1 tbsp. olive oil
- 1 tbsp. Thyme leaves
- 6 3/4 inch-thick-slices brioche or Easy No-Knead Sweetbread
- Sliced citrus, for serving
Directions:
- In a food processor, add almonds, sugar, pinch of salt, eggs, butter, and almonds in order; pulse well until a paste is formed.
- In a small saucepan, simmer orange zest and juice, water and sugar over medium-high heat, stirring until sugar is dissolved. Remove from heat and let cool.
- In a small bowl, combine olive oil, thyme, almonds and a pinch of salt.
- Heat oven to 400 degrees F. Brush each slice of bread with syrup, then spread an even layer of almond paste and top with almond mixture.
- Bake for about 20 to 25 minutes, until the edges of the bread are caramelized.
