5. Don't use fresh mozzarella
You don't want your dough to be a watery, milky puddle, so use grated, sliced, or diced part-skim mozzarella instead. For the same reason, try to avoid heavy tomato sauces. Use thin slices of tomatoes, squeeze out the excess juices, and further dry it from salting and patting.
