Peanut butter could raise concern in its susceptibility to invasions by mold and fungi. Aflatoxin, a fungus common to peanut products, is notorious in causing developmental delays in children, and a higher risk of liver cancer over time. Though light roasting helps to protect peanuts against aflatoxin, outbreaks have occurred from time to time.
