How long leftovers typically last in the fridge
According to Guy Crosby, a certified food scientist and associate professor at the Harvard T.H. Chan School of Public Health, the FDA guidelines are too general to apply to every single type of leftover. In fact, how long leftovers last in the fridge depends on the chemical properties of the food.
- Acidity creates a hostile environment for bacteria growth.
- Foods high in acidity (such as lemon juice, tomato sauce, etc.) can last up to a week in the fridge.
- Foods low in acidity (such as fish or eggs) should be consumed within 3 days when cooked.
- Low moisture content inhibits bacteria growth.
- Foods low in moisture (such as peanut butter, dried fruits, honey, etc.) can last several months in the fridge.
- Foods high in moisture (such as cooked meat or vegetables) should be consumed within 3 days when cooked.
- High sugar levels are less ideal for bacteria growth because sugar binds water.
- Foods high in sugar levels (such as sweet potatoes, baked goods, etc.) can last up to a week in the fridge.
- Foods low in sugar levels (such as cooked meat or vegetables) should be consumed within 3 days.
- If your leftovers have several ingredients in them (let's say sliced turkey with stuffing and cranberry sauce), consume it before the most easily spoiled ingredient goes bad (the sliced turkey!).
