Most health benefits associated with oats are due to their rich fiber content, including providing long-lasting energy and promoting digestive health. Oats are also processed into different varieties, which affect the texture and cooking time. Generally speaking, the more broken-down the oat is, the longer it takes to absorb water or cook. It is worth noting that rolled oats are steamed and therefore not considered raw. But because the main concern with eating raw oats is phytic acid that acts as a mineral blocker, simply soaking oats overnight can break it down and ensures the safety of consuming raw oats. Note that you may still find soaked oat groats or steel-cut oats too hard to be consumed. In that case, the introduction of heat is recommended to soften the oats further.
