2. Milk
Okay...I just lied. It is perfectly fine to freeze and defrost your milk. But several factors affect the result:
- Fat in milk will separate when frozen. So full-fat, half-and-half, and heavy cream may require a good shake or even a swirl in the blender after they defrost.
- The faster the freeze, the smaller the change in taste and smell. Place milk next to the freezer wall or on a metal shelf for a faster freeze.
- The quality of defrosted milk will be no better than it was before freezing. Freezing can only slow down bacteria growth. If the milk is dumped in the freezer right around or a few days after the expiration date, they can taste or smell funny. So freeze milk early.
- Put milk in a container with some space near the seal. Remember that water expands when frozen.
Defrosting in the fridge can take a day, but it's the safest method.
